Pickled Grapes

Ingredients

  • 1 lb seedless grapes
  • ½ c. white vinegar
  • ½ c. water
  • 2 tsp. sugar
  • 1 cinnamon stick
  • ½ tsp. allspice
  • 2 whole cloves
  • ½ tsp. rose water
  • ¼ c. freshly squeezed orange juice

Instructions

  1. Place approx. 1 lb seedless grapes in a hot, sterilized pint jar.

Bring to a boil:

  1. ½ c. white vinegar
  2. ½ c. water
  3. 2 tsp. sugar
  4. 1 cinnamon stick
  5. ½ tsp. allspice
  6. 2 whole cloves
  7. ½ tsp. rose water
  8. ¼ c. freshly squeezed orange juice

Pour over grapes, leaving 1” headspace. Seal, let stand

  1. Make 2 days before serving

Labni (Condensed Yogurt “Cheese”)

Stir several dashes of salt into 10 c. plain yogurt. Place in cheesecloth and hang 4-5 hours to drain. Drizzle with olive oil and sprinkle with fresh mint. Serve with pita bread and black or green olives.

  • 3 pita bread
  • 2 cups chickpeas
  • .5 cups pine nuts
  • 2 Tbsp shortening
  • 5 cups yogurt
  • 1 Tbsp garlic crushed
  • Salt & pepper (to taste)

Instructions

  1. 3 pita bread, cut into small pieces and fried until brown in vegetable oil.

  2. 2 c. cooked (or canned) chickpeas, drained
  3. ½ c. pine nuts toasted in 2 Tbl shortening until brown.

Mix together:

  1. 5 c. yogurt
  2. 1 Tbl crushed garlic

Salt & pepper to taste

In a large pan, layer the pita crisps then the chickpeas.

  1. Spread the yogurt mix over the top. 

  2. Sprinkle with the toasted pine nuts and dried mint. Serve immediately.

Optional additions: cooked chicken, fried eggplant,c hopped lamb, etc.

Ingredients

  • 2 c. sugar
  • 1 c. water
  • 1 tsp. lemon juice

Instructions

  1. Boil until thick enough to stick on the back of a spoon (firm ball stage). 

  2. Add 2 – 2 ¼ lbs roasted hazelnuts (or peanuts) and stir for 5 mins over low heat.

  3. Pour into a buttered 8” square pan. 

  4. Cool 10 mins and cut into 1” squares.

  • 1 c. honey
  • 1 ¼ c. sugar
  • 2.25 Lbs sesame seeds
  • butter

Instructions

  1. Mix 1 c. honey with 1 ¼ c. sugar and bring to a boil.
  2. Lower heat and stir 5 mins. 

  3. Add 2 – 2 ¼ lbs sesame seeds and stir an additional 5 mins. 

  4. Pour into a buttered 8” square pan. 

  5. Cool 10 mins and cut into 1” squares.

  • 1 large onion
  • 4 Tbl. Butter
  • 2 c. cooked lentils
  • ½ lb thin noodles
  • Salt & pepper
  • ¼ Lb “burnt” butter

Instructions

  1. Saute 1 large onion, minced, in 4 Tbl. Butter until soft.
  2. Add 2 c. cooked lentils and stir well

Toss with:

  1. ½ lb thin noodles, cooked & drained
  2. Salt & pepper to taste
  3. Top with ¼ Lb “burnt” butter

Dawood Basha (Syrian Meatballs)

Ingredients

  • 1 ½ lb finely ground meat any combination lamb, turkey, beef
  • ¼ c. finely chopped onion
  • 10 medium onions whole, peeled
  • 2 c. tomato juice
  • ½ c. pine nuts
  • 2 Tbl flour
  • 3 Tbl vegetable oil
  • Salt & pepper to taste

Instructions

  1. Mix ground meat with chopped onions, flour, salt and pepper.
  2. Shape into 1” balls.
  3. Fry with whole onions and pine nuts in hot oil until brown.
  4. Pour tomato juice over meatballs and onions and adjust seasonings.

  5. Cook over medium heat until done, app. 30 mins.
  6. Serve with rice.

Syrian Stuffed Apples (serves 8)

Ingredients

  • 4 very large green apples
  • butter
  • shredded coconut
  • 4 fresh or canned, drained figs, peeled and chopped
  • 1 c. shredded coconut
  • ¾ c. walnuts and blanched almonds chopped
  • ½ c. brown sugar
  • 2 Tbl. White sugar
  • ½ tsp. rose water
  • ¼ tsp. each nutmeg and cinnamon
  • 8 whole cloves
  • juice from canned figs
  • syrup

Instructions

Cut 4 very large green apples in half crosswise. Scoop out pulp, leaving a ¼ shell. Brush outside with butter and roll in shredded coconut. Press coconut into apple skin and place in buttered shallow baking pan. Set aside.

To reserved apple pulp add:

  1. 4 fresh (or canned, drained) figs, peeled and chopped

    1 c. shredded coconut

    ¾ c. walnuts and blanched almonds, chopped

    ½ c. brown sugar

    2 Tbl. White sugar

    ½ tsp. rose water

    ¼ tsp. each nutmeg and cinnamon

    8 whole cloves

    Water and/or fruit juice to cover (can use juice from canned figs)

Bring to a boil, lower heat and simmer until slightly thickened. Using slotted spoon, remove ingredients and stuff apple halves. Reserve fruit syrup. Place in center of each stuffed half 1 peeled fig, stuffed with 1 whole blanched almond. Spoon 1 tsp. of fruit syrup (see above) over top and sprinkle with shredded coconut. Carefully pour remaining syrup and ingredients around apples in baking pan, cover with foil and bake at 300F for 25-30 mins until apples are tender. Do not baste. Serve hot or cold on a bed of syrup.

Bharat (Syrian Spice Mix)
